Sautéed Green Beans
Green beans are one of those foods that I think of as a comfort food. It’s probably because my family always has a green bean casserole for Thanksgiving. Although I do enjoy having green beans throughout the year and not just on the holidays. Sautéing green beans are a great way to spice up your green beans instead of always steaming them, or eating them in a higher-phe casserole.
Who wants steam green beans with no flavor in them anyway? I know my mom doesn’t. Apparently, my grandma would only boil or steam vegetables, and my mom hated green beans so much that she wound up flushing her green beans down the toilet to avoid eating them.
One of my favorite ways to add flavor into vegetables is to add balsamic vinegar. I love to let them marinate in the balsamic and all the seasonings before adding them into the frying pan. I tend to use a ziploc bag to mix it, so I can shake it (and have less dishes to clean!). I’m also a HUGE fan of garlic so pretty much everything I cook has (a lot of) garlic in it.
Having PKU means vegetables are a large part of my diet. And I do love my veggies. But, I do think it is important to find new ways to cook my favorite veggies. Who doesn’t like to mix things up a bit? These sautéed green beans are a great way to mix it up and to make for the whole family, not just the PKUer in your life.
Ingredients
1 cup of green beans
1 tbsp. olive oil
1 tbsp. balsamic vinegar
dash of lemon juice
¼ tsp. garlic salt
¼ tsp. onion powder
¼ tsp. black pepper
¼ tsp. salt
Servings per recipe: 2

Directions:
Rinse green beans and cut off the ends of the green beans
Place green beans in a mixing bowl (or a Ziploc bag like me) and add the olive oil, balsamic vinegar, lemon juice, and seasonings.
Let them marinate for at least 30 minutes (feel free to mix green beans once or twice while its sitting).
Put the cooking oil in your frying pan and heat it up, once it’s hot add the green beans. Cover with a lid and reduce to medium heat. Stir occasionally. If you prefer your green beans to be a bit more crunchy cook for 8-10 minutes, if you like them softer (like mine) cook for 15-20 minutes.
