Honey Glazed Carrots

When I think of carrots, I automatically think about carrots and ranch dip. It’s a classic, who doesn’t love carrots and ranch? But you know what? Carrots can taste good when they’re cooked too.

Even just thinking about these honey-glazed carrots makes my mouth water. The honey and all the seasonings that go into this recipe (especially the cinnamon!) make these carrots so flavorful. Also a great dish to make now that fall is upon us. This recipe is perfect for switching up your family side-dish game. Not only are these good for your regular family dinner, but you can always multiply this recipe to make it bigger and serve for bigger families or holidays, like Thanksgiving or Christmas.

The first time I remember ever trying glazed carrots was at a PKU Networking conference I went to in Denver Colorado several years ago (it was the same weekend as Will and Kate’s royal wedding, as I remember). At the conference, I was in a session that focused on seasonings and different ways to use them. They had some glazed carrots for us to try that had different types of seasonings on them. Ever since then, I’ve wanted to try making my own. It wasn’t until this past year that I gave it a shot. And let me say, I wish I hadn’t of waited, they’re soooo good!

Ingredients:

12 oz. carrots (about ½ of a 1 lb. bag)

1 ½ tbsp. olive oil

2 tbsp. honey

1 tsp. lemon juice

2 tbsp. butter

¼ tsp. salt

¼ tsp. pepper

¼ tsp. ground cinnamon

¼ tsp. garlic salt

¼ tsp. thyme

Servings per recipe: approx. 7

Serving size: 1/4 cup

Directions:

  1. Preheat the oven to 425 degrees F.

  2. Place the carrots in a medium sized mixing bowl and add the olive oil, honey and lemon juice. Mix together. Then add the salt, pepper, ground cinnamon, garlic salt, and thyme (don’t add the butter!).

  3. Grease your casserole dish. (You can use cooking spray or butter). Then add the carrots to your dish. Place the two tablespoons of butter on top of the carrots and place into the oven uncovered.

  4. Cook for 15 minutes, then take the carrots out a give it a stir and put them back in the oven for another 15 minutes.

  5. Serve and enjoy!
