Potatoes are the holy grail for PKUers, am I right? I think I eat potatoes way more than I should. But I can’t help it! There’s so many different ways to cook and prepare them, and they also just taste delicious. These roasted potatoes have been a great way for me to mix up my potato recipes. Sometimes when making delicious potato recipes they take a lot of prep work or it’s just a complicated recipe. My roasted potatoes don’t require too much preparation, and once they’re in the oven you don’t really need to do much else.

The only preparation that these potatoes require is to dice the potatoes into bite sized pieces. Then I place them in a mixing bowl and coat them with a little bit of olive oil, salt, pepper, garlic powder, onion powder, and some Italian seasoning. Just these few seasonings really make these potatoes taste great!

I made this recipe using only 1 russet potato because I wanted to keep the total amount of food I made to be small since I’m only cooking for myself. However, this is a super easy recipe to multiple and make for the entire family. This dish can be a great meal for the PKUer or it can be a great side dish for a large family gathering. And because this can be made in larger quantities, you should also know that these taste just as great when reheated.

I am trying to discover recipes like this that can be made in larger batches, but reheat well. I’ve always struggled with packing lunches for work, and school when I was younger. Now I realize that an effective way for me to actually eat my leftovers is to take them to work with me. The only issue with that is that sometimes certain foods don’t reheat well. These roasted potatoes are delicious, reheat well, and go great with ranch (or ketchup if that’s what you prefer)! But they also taste yummy without any dip too!

Ingredients:

1 russet potato

½ tsp. of olive oil

¼ tsp. salt

¼ tsp. garlic powder

¼ tsp. onion powder

1/8 tsp. black pepper

½ tsp. Italian seasoning

1 tbsp. of butter

Phe per serving: 38.4mg

Serving Size: ¼ cup

Servings per recipe: 6

Directions:

  1. Preheat oven to 425 degrees

  2. Dice potatoes (optional: peel skin) and place into a medium sized mixing bowl.

  3. Add olive oil, salt, garlic powder, onion powder, black pepper, and Italian seasoning. Blend well.

  4. Grease a casserole dish with the butter, then add the potatoes.

  5. Cook potatoes in the oven for 20 minutes. Flip the potatoes, and cook for another 20 minutes.

  6. Serve and enjoy!
